Savigny-lès-Beaune 1er Cru les

Vergelesses White

The wine is made from Chardonnay grapes sourced from a plot of 0.58 ha, with vines planted between 1989 and 1999. The soil is predominantly composed of limestone, and the vineyard benefits from an east-facing exposure. The soils are plowed and then grassed, with minimal inputs. The grapes are manually harvested, with systematic sorting to ensure quality. Careful selection of harvest dates is based on monitoring the grapes' maturity. In Savigny-lès-Beaune, the Les Vergelesses climat, located at the top of the slope, is quite rare for Chardonnay.

The climats and lieux-dits of Les Vergelesses in Savigny-lès-Beaune and Pernand-Vergelesses cover large, long, and wide areas. The name derives from the Old French "Vergel(l)e," meaning "small twig" or "small branch," reflecting the historical practice of cultivating fields in narrow strips of land. The toponym first appeared in 1234 in the Martyrology of Notre-Dame de Beaune. Vinification begins with a long and gentle pneumatic pressing, followed by overnight settling after pressing. Alcoholic fermentation is partially conducted in stainless steel tanks.

The wines are then transferred to barrels (approximately 15% new oak) for malolactic fermentation, followed by ageing for 12 months. Finally, the wine is racked into stainless steel tanks for an additional 6 months of aging before bottling.
