Bourgogne Pinot Noir

The wine is made from Pinot Noir grapes sourced from three distinct plots: Champ l’Huillier in Corpeau (0.68 ha), Monpoulain in Volnay (0.2045 ha), and Les Grands Clous Perrons in Meursault (0.1957 ha). Champ l’Huillier was planted in 1962, Monpoulain in 1972, and Les Grands Clous Perrons in 1951. The soil in Champ l’Huillier is characterised by deep clay, while the other plots feature ploughed and grassed soils with minimal inputs. The grapes are manually harvested, with systematic sorting conducted to ensure quality.

The winery carefully selects the harvest dates based on monitoring the grapes' maturity. Vinification involves 100% destemming, followed by a cold pre-fermentation and a 15-day maceration period. The wine is aged in oak barrels for 18 months, with approximately 15% of the wine aged in amphorae and 15% in new barrels. Finally, the wine is racked into stainless steel tanks before bottling.
