Meet the producer

Domaine Didon is a remarkable estate rooted in the principles of biodynamic agriculture. David's wine journey began with a specialisation at the Beaujeu School in 1995, the first of its kind in France. 

After gaining various experiences in various agricultural places in France, David began working for Etienne De Montille in 2001, where he was tasked with leading the conversion of the estate to organic and biodynamic practices.

With the support of pioneers in natural wine, he successfully achieved the domain goal. This pivotal moment set the stage for the establishment of their vineyard. During this time, he also met Naïma, who later became his wife.

David and Naïma have always adhered to the principles of biodynamics. To fully realise their vision, they took over a 2-hectare vineyard in Chassey le Camp in 2017.

This single plot includes three grape varieties: Pinot Noir, Pinot Blanc, and Aligoté, all planted between 1947 and 1960 through mass selection. 

The Estate’s philosophy

In their vineyards, the estate embodies ancestral farming methods, including horse ploughing and long-root planting. David and Naïma feel a deep responsibility to preserve this vineyard and allow it to express its true potential. Most of the vines are situated on a full east-facing slope, and the primary soil structure is clay-limestone. Chassey le Camp, known as "the white vines," is celebrated as one of the best terroirs in the commune. 

The estate works with whole bunches and prefers not to have overly long macerations, aiming for fruitiness and a smooth, velvety tannic structure in their red wines.

Currently, their wines undergo a nine-month ageing process, with plans to extend this period. The pressing is gentle, utilising an old vertical press, and the wines are kept on their lees, with careful racking to avoid filtration. The red wine is aged in oval oval-shaped vat like in the photo behind.

Their overarching philosophy is to minimise intervention in the cellar, allowing the vineyard's character to shine through.
